Anyone care to share their cooking techniques/recipes for a steam/convection oven?

I just am getting around to trying to use our steam oven and I noticed that there really isn't much in the way of recipes or guidelines on how to cook with it.
The manufacturer, Thermador, has a bogus cookbook that really isn't too useful as the recipes are limited. I've even poked around Woolf and some of the other high end sights and they all seem pretty much the same.
Any information would be greatly appreciated. Thanks

Steam in the first 10-15 mins of a bake produces great bread. Try your hand at baguettes or a crusty hearth loaf.
