Cut the center into 2-3 nice 2 inch steaks. Take a black iron skillet. Heat in on the grill or in the oven at 500-600 for about 15 minutes. Salt and Pepper the steak how you like them. Sear them on each side for about 1-1&1/2. Then place them back in the skillet and finish in the oven or pit for another 2-3 minutes.
Keep the ends and use them for the cream cheese jalapeno method but please dont use the center cuts.
Also the meat will not dry out this way
