What's the deal with transporting a handgun in a car. Any crazy nonsense likes its got to be in the trunk, unloaded, etc?

Nope, same laws apply as in LA- you are allowed to carry a firearm in your vehicle (concealed or visible). Your vehicle is an extension of your home. And, Yes, it can be cocked and loaded.
I'm in Houston every other week, so let me know if you need to call in some back up.

It has to be concealed in your car in TX.

A several years back I was doing the same thing except I was traveling to La from Texas, I never could get a straight answer so it was one of the reasons I just went ahead and got my CHL.
Texas and La honor each others CHL, but I could not figure out if they honored the "extension of the your home" law, even though both states have this law for their own residents.

Incorrect. A pistol in your vehicle must be concealed.
Be careful in City of Houston. Absent a CCL, LEO in several areas of town have been instructed to arrest anyone with firearm in their vehicle even though it's not against the law...to let the court make the decision.
Just don't get pulled over, be respectful, keep your weapon concealed and don't disclose that you have a weapon.

Texas Motorist Protection Act (MPA) - HB 1815. Approved and signed into law in 2007
Affected the Penal Code, allowing citizens to carry a handgun "inside of or directly en route to a motor vehicle that is owned by the person or under the person's control", providing:
-the handgun remains concealed
-the person is not engaged in criminal activity, other than a Class C misdemeanor that is a violation of a law or ordinance regulating traffic
-the person is not prohibited by law from possessing a firearm
-the person is not a member of a criminal street gang
