Yeah, the West Fork is a really good trail. It gets much more shade than the exposed trails so in the winter it can be much colder, and you will even see ice on the creek and icicle waterfalls. Have done it all seasons and never fails to disappoint.
Boynton Canyon is a good one in the winter because it is pretty exposed, but the canyon at the end of the hike is worth it.
AB Young to the East Pocket Lookout tower (or "end of the world") is an awesome trail but climby with lots of switchbacks.
*OP if you hit the West Fork trail, FYI you'll pay an extra 10 bucks to park even if you have the Red Rocks pass (which you need to park anywhere along 89A).
