Just tell him you're not going to do it because its none of your business to begin with and you don't want to make other invited friends get an unwelcome vibe if they're not vaccinated and end up not showing up.

If he's cool like you say and not a Biden voter, he should understand. His wife will just probably not let him hangout with you anymore outside of work
