Looks good. We never really had corned beef growing up. I've eaten it on occasion mainly in sandwich form, but it's pretty good. I've no idea how to make it. Do you typically buy it pre-made or make at home? Hard to do? Seems like more or less what you made there would do well between some rye (almost a reuben but without gratuitous dressing). Maybe just a simple vinaigrette. I guess that's not keto but I'm on a see food diet so no bother to me. (not really true, I've got young children so I have to round down to their palate and eating abilities)

They make keto friendly thousand island dressing that would probably go well with it.

You can cook/roast corned beef from a marinated (Corned) portion sold in the meat section. I usually just buy sliced from the deli case.

A Ruben would have sauerkraut where I used cabbage, toasted rye, swiss cheese and Russian dressing. Definitely not keto.
