Grapeseed is my preference for high heat pan frying due to its smoke point and lack of any real flavor. That said, it's expensive and if you're just frying up some pork chops you (hopefully) aren't using high heat which mitigates the need for your oil to have a high smoke point.
At a medium temperature you can use any oil, even lard, without facing any real risk to your health (in moderation). It's when the fats start breaking down in these oils, via heat or overuse, that the most unhealthy attributes begin to come into play.
