Cast iron pan bottoms can be too smooth. One of the premium brands( don't remember which one) was polishing their bottoms to a near mirror finish. Problems with seasoning peeling off prompted them to back off to a rougher surface. The too smooth units were offered on Amazon at a discount price, last year as I remember.
