Is it simply old man strength? or does it take fathering kids to fully peak with Dad strength?

Its tough to tell the two apart when you're in your 30's & 40's with kids. Science says your strength peaks between the age of 25-30 and the muscle will remain relatively close to your peak for 10-15 years.

I'm a bit over 50 and can lift, move, break, and carry things I'd have never bothered trying when I was in my 20s and 30s.
