flareups occur on a grill when the fat renders out of the meat and catches fire. the best way to prevent it is to cut the excess fat off the meat and try not to use too much oil when marinating/basting. if the fire is hot enough to cook the meat, it is hot enough to ignite dripping fat, so forget trying to keep that from happening.
fwiw, I always grill on a pretty hot fire and never walk away from the grill while doing it.
