Also I guess next option would be go around Mardi Gras time Feb 9-12th'sh 2018....

That is by far, the busiest time of the year and it will cost you an arm and a leg. Taking a quick look, the only thing available is club level Boardwalk for $1100 per night or Animal Kingdom Lodge for $688 per night for booking between Christmas and New Year.
