If there was a way to keep Brees and get rid of SP, I'd do it. I think they are a package deal though - if SP isn't there when Brees is a FA, I doubt he'll re-sign, and I think he wants one more deal so he can go after Favre's and Mannings's records.
To answer your question, I think SP regressed more. Sean has led some of the greatest offenses in NFL history and 2009-2013 (excluding his Bountygate suspended year) was by far the greatest run in Saints history. It was sustained NFL success which is tough.
Les won a ton of games and had a great run, but his luck just ran out and he couldn't find/develop a good QB. In the past, he'd win on the last second and pull out wins like at Auburn last year. He was excellent at managing a program but not coaching necessarily. Eventually, a few management miscues will catch up to you.
