re: Altering your menu for certain guests

I agree, it's a PITA when a guest suddenly adopts a restricted diet and wants the whole world to accommodate him/her. But in the interest of family harmony, it's not too hard to make a big tossed salad and a loaf of nice bread; she can share in the meal & have something on her place without your needing to alter any of your other menu items.
