This is the only way to really make it work. Sometimes if you can leave the night before, try heading out after dinner and driving for several hours at night. Obviously this only really works if the drive is a few hours. We also found that leaving at 5 am helps them fall back a sleep for a few hours.
The only other two suggestion is having one parent sit in the back and feeding the kid lots of snacks.
