Copper or Winter Park if you want a no frills experience for a beginner. If you want more of a mountain town experience go to Steamboat or Crested Butte but be prepared to pay a lot more.
Is Crested Butte really more expensive?

I found it to be more expensive especially lodging. I ended up staying in Gunnison(cheaper lodging) and riding the bus 45 mins each way to and from the ski area. Flights to Denver are normally cheaper as well than to Gunnison. I can't remember what lift tickets cost as my season pass comes with 3 tickets there and I stopped at Costco in Denver on the way as they sell 2 for 1 lift tickets there.
Crested Butte though is isolated so crowds are significantly lower than your I-70 resorts but from my experience it will come at a higher cost.
