58 should be enough. Don't carry a bunch of extra crap. I would look at Granite Gear packs, Osprey are the REI rec of choice and they are fine.
Check out the cottage gear scene if you really want to some light weight stuff. Six Moon Designs, Mountain Laurel Designs, Zpacks, etc.
You have to carry the canister, most people use the smallest bear vault I believe. I think a lot of people end up sleeping with their food because they can't fit it all in the canister. YMMV on that one, not a recommendation.
