Nashville is an awesome city, and there is plenty to do there. But a week might be pushing it. Consider heading to the mountains for a couple days. Also, there are a handful of whiskey distilleries right outside of Nashville as well that are fun to visit if your into that. The Jack Daniels distillery is about 30 minutes outside the city, and its a neat tour. There is lots of live music, and lots of neat bars. Depending on the time of your your planning on going, Nashville does also have a NFL and NHL team.

Jack Daniels is an hour and 15 minutes outside the city but well worth the trip. You can do Jack Daniels (Lynchburg) and George Dickel (Tullahoma) in one day. Unless you want to drop $350/night for a hotel room, I'd stay in Brentwood/Cool Springs off of Carothers. There are a few Marriott properties and an Embassy Suites that are nice, close to the interstate and easy to get in and out of with several restaurants and bars nearby.
I'd say a week is pushing it. Do some of the country music stuff (Bluebird, Ryman, Country Music Hall of Fame, Opry, honkytonks on Broadway, George Jones Museum). There a several breweries downtown now and a few distilleries as well and a ton of good restaurants.
You can also tour some stuff like The Hermitage (Andrew Jackson's plantation) and then downtown Franklin/Columbia (Shake Rattle and Roll, Carnton, and James K Polk House) with 4-5 plantations and antibellum homes) if you are into that sort of thing. There's also Cheekwood and Belle Meade which is worth driving through.
I'd do Nashville for a few days and then go to the mountains for a few days.
