Recommend best rewards card for flight...

to the keys around Labor Day. I know the deals are constantly changing. Southwest doesn't fly Nola to Key West anymore so it's looking like DELTA or American. Primary purpose of this card would be solely to pay for this trip.
Would it be beneficial to open a card today, get 30-40k in points for signing up and meeting the minimum balance? Would I receive the points in time to book the flight? Do yall recommend a card specifically for 1 airline or something like AmEx? Can I use it for a year and cancel before any fees?
A little background: I have 1 other reward card (Amazon) that I use for everything and pay the balance off monthly. I have ~760-790 credit score depending on agency. I don't fly but once or twice annually and it's usually southwest because they are cheap. I read the 280+ Page thread but figured with cards and deals constantly changing yall may have a little more current info.

I have cap one venture card. I like it because it has "purchase eraser". So basically you purchase your travel like normal and then use the points to pay for it. Works for flight hotels and rental cars as well as some other stuff. Get 2 points per dollar spent. Use as our everyday card and pay it off each month

I do not recommend keeping the Capital One card after the first year. If fact, the math clearly advises against anyone making such a recommendation.
It has a $59 fee and you effectively earn 2% cash back.
There are no annual fee cards that earn 2%, namely the Fidelity Visa and the Citi Double Cash.
If you want a free $400 for signing up for Cap One, go ahead, but keeping it past year 1 is a bad move.
Eta: using a card such as Cap One or Barclay Arrival+ for these tickets for the signup bonus and then cancelling it afyer the first year is a good strategy for your situation, not to mention about 5x easier to understand.
