Another vote for shrimp spring roll app. It's pretty "run of the mill", but delicious and would pair well with your main dish. Wife does them about once a month, looks fairly easy. She boils the shrimp in crab boil to give them good flavor and heat. If you're looking for something a little less time consuming, there are plenty of recipes out there for various types of lettuce wraps.
