you can walk up with $1 and play a hard way bet if you like. But if you want to make place bets and/or make pass/don't pass line bets you have to play the table minim or higher. This is on a color placard on each end of the table. A table with a $5 minimum bet for example you have the option of playing a $5 pass line bet (if you like you can place an optional odds bet behind this up to the table max also noted on the placard.) You can also place the 4,5,9,10 for $5 and the 6&8 in increments of $6. So like the other poster said, bring what you are willing to put at risk.
