You can definitely find a nice used setup for $1100 that will allow you to stand and fish. With summer right around the corner, you will start to see more people selling kayaks, whether its from winning them in tournaments or upgrading for the summer season, etc.
I'd say keep perusing CL, BCKFC, the LKFC forum and even Texaskayakfisherman.com You may find a deal worth a little drive.
As for pedals vs. paddle, it's possible to find something in your range- I sold a Hobie Revo recently for $1000; deals can be had, you just have to look.
But if you're sticking with the 2 you listed, probably go with the ascend and save the few extra bucks and buy a couple new rods and reels.
