Im confused. Are you just making up numbers in here with these sales numbers? Are those square footage numbers accurate?
That guys Olive Garden statement is way off from yours.
I would think that Sammys on Highland does better than Twin Peaks, Hooters, Parrains, Ruffinos, TJ Ribs, and maybe more than one of the chains in 8-10.

Sales per sq ft are based on industry numbers that I've adapted.
Never Busy ($150)(restaurant is losing money)
Rarely Busy ($200)(restaurant is breaking even)
Busy ($300)(restaurant is making money)
Very Busy ($500)(restaurant is making lots of money)
