Cause he was a brilliant businessman, if you have the best..you can set your price. he didn't realize how much of a lunatic Walter was. He underestimated him and overestimated himself. By the time he ran over the guys and went against his ruling, he'd seen this was more than he bargained for. Too much trouble. Then,...96% was a chance he was willing to take, but he was grooming gale to learn the 99% recipe. Then with galke gone he had no choice. Gus wasn't a man who made many mistakes, but as an audience, we got to see him make one. Because of his pride and high standards he'd set for himself.

Pride. Pride was the downfall of a lot of men in the series.
