Been several times, stayed in Wailea and Hana. Definitely one of my favorite places. Great snorkeling, body surfing, etc. everyone mentioned the normal things, but drive upcountry to Kula and the vistas will blow your mind. Go over to the Iao Needle and within a 10 minute drive from Kahului you will be in another world.
There are some great hole in the wall restaurants in Kihei and Paia, check the snorkeling at Turtle Town and at Makena and past Makena at the end if the road. Lots of cool stuff.
Great body surfing at Little Makena beach all day - it's a hippie and nude beach, but they don't bite; you may get a contact high though.

One thing. It's been a while but if you get off the beaten path on the W/NW side of the island beware the Private Property - Do Not Enter signs. Those aren't pineapple plantations.
