I faced the same exact problem with defending the QB roll outs. I think the only way to defend it would be to put DBs as OLBs and have them play QB scrambles aggressively. If your opponent uses the edges, add speed on defense. If they play power, add strength and block shedding to the field. Even then, their coaching points will be much higher so you'll have to be smart about your play calling and guess what they will run and commit your defense to it.

9s shut me down once by committing to the run on almost every play and my OL was blown up. When I faced PC once, I was able to affect his DE play by always running away from him and adjusting my pass protection towards him. On defense against Georgia I was disguising my cover 3 defense constantly and forcing him to throw into coverage.

Even if you do all of that, you're still going to be worse than everyone in terms of personnel and will get exploited by better athletes. It doesn't help that the sliders we use are heavily stacked in the AI's favor.
