Your idea was great, but I'd fire up the crawfish pot. Half a bag of seasoning, roll the ribeyes for 3 minutes and turn off the fire.
Let soak for 20-30 minutes, or until well seasoned.
For the dip, I'd go with mayo, ketchup, Worcestershire, s and p.
