One of the guys that cooks with us at school jam fund raisers has 2 of these mounted in wooden boxes that stand upright and have room for a gallon sized bucket underneath.

My dad has a setup like this. I think the cutter was about $100 and he had a box made for it out of stainless steel. I think they sell these at Cabella's
