No reason why your POS software should run slower under Windows 7 on newer hardware.
One thing that comes to mind is where temporary working files are stored.
Could it be that on the old systems these were locally stored and now on the network drive?
As an option you can try vDos (LINK /) .
It won’t speed up anything, but the DOS experience under Windows could surprise you.
