Doesn't surprise me having recently watch a show that dealt with the process created it. A vat of the original mixture was considered a failure(gag me with a spoon type of stuff), but the stuff wasn't thrown out. Two years later the vat was reopened and the taste had mellowed. A few more ingredients were added to it and a bit more of time to age ensued. That recipe is what you get today.
