Depends I guess on the industry, but for groceries it's fairly obvious by the products on the shelf or if you're buying straight from the local, as sadly most local retailers don't even buy much local product, but some do much better than others in attempting to. For restaurants however, it's a lot word of mouth, even more social media, and people you run into at the farmers market who sell to these restaurants.
