Try a Sauce Piquante. Start the same as you described, but after roux is done....add one 16 oz can of tomato sauce and shake in a good bit of Worcestershire sauce. Add bell pepper. Brown some sausage separately and add that also. Add rabbit after it has been cooking awhile. Cook until tender and serve over white rice with garlic bread and salad.
