she's very anti social and does not like any other dogs.She loves us and that's it.Any other people or dogs and she either cowers in a corner or lashes out.
We've attempted to interact her with other dogs but she don't want to have anything to do with any of them.

Well then this is your first problem to address. Our second rescue was like this at first. It took about 5 trips to a doggie daycare place (once a week) to get her used to other dogs and to socialize. When she finally came around, it was amazing how much more confident she was.
I'm not saying something like that will be as easy for you. But I'm going to guess that there's a root cause for the over-submissive behavior and being anti-social. And it's probably the same cause as the not eating while boarded.
If you really want your dog to live a happy life, find a trainer that can help you get her our of being over-submissive and anxious.
