I go 60/40..but also get 50/50. I think pork sausage tastes better then venison sausage, so the more the better IMO.

I prefer the taste of deer honestly. That is a the ratio that I have always grown up with so that is what I use. 60/40 seems like it would be very greasy. Of course, when we do our deer sausage, we buy pork fat from the meat processor(much cheaper) so it is mostly fat with some meat.
