Have you considered franchises? Subway can make some serious coin if you find a market that isn't already saturated. You won't make a killing on one, but can start with one and build from there.

If I could think of any other viable ones, I wouldn't be in this office right now.

I have heard great things about Subway, but like you said the market is typically full of them. I guess that is the main problem of them being relatively cheap to start ($50,000-$100,000) in that they don't protect their owners with territory rights.
