I doubt a former FBS head coach would want to take a step back and be the OC for Les at LSU. I'm thinking we have a better shot at a guy who is an up-and-coming QB coach or OC from a smaller college somewhere.

You mean FBS, FCS is schools like McNeese and Northwestern.
