Try soaking in vinegar. My grandmother used to do it with all her deer. I think the old people would use it to take the sheen off of meat before the days of refrigeration. If you soak and drain it before cooking the vinegar taste should be gone by the time its cooked.

What they said about the vinegar in the water. Works on boar hogs too.
