The cooks cook the jambalaya, it is judged and then boxed up and sold. You don't know whose you are getting and it is not always good. With the limitations the cooks have, the jambalaya there is never the best by my standards, but it is authentic.

Just wondering what the requirements are to be a contestant. Is it simply the first "so many" people to apply? Or do you have to cook something first?

If there's some kind of "test" the jambalaya should be pretty good. If is't just ther first people to apply, who knows what you'd get. I could apply and my jambalaya would probably suck.
