You've gotten some pretty decent advice on so far, but I'll add my 2 cents.
Where to stay: either downtown/uptown Dallas or downtown FW. In Dallas, the best hotels are the Ritz, Za Za, the Crescent, the Mansion, the Joule, or the Adolphus.
In FW, I've only stayed at the Omni, but I thought it was an excellent value.
As far as going out, this really depends on your style. As a general rule you should stay away from the West End, Deep Ellum, Addison, and Lower Greenville (although there are some exceptions on Greenville).
