Shrimp Etouffee

How to make a good Shrimp Etouffee.

I'm sure there will be much better recipes offered but I have a simple one.
I saute some onions in butter, throw in some Guidry's then tomato sauce and cook down then add shrimp.
I have also used those packets that you pour out and make a roux with then add water to. Granted, it's not "cooking" for the ones who like the "cooking" bit but I hafta admit it's a nice change sometimes. The gravy is more like a Picadilly one in that it's tic tic.
