Kind of my thoughts after reading through this thread. I'll admit I'm not positive what makes a restaurant authentic or not, but in my experience in various cities in Mexico was that all of the salsas I had were more like pico de gallo, and the use of cheese was not nearly as prevalent as the Mexican places around here use.
