Got a Core Ultra 258v mini, now what?

It was free and I want to do something with it to be grateful but I just got a Meteor Lake mini with basically unlimited surveillance and media capabilities.
This is a copilot + mini with 32GB unified LPDDR5x.
Any ideas? Good enough for image/gif generation? How do I start doing that?
