For a fish fry unless the fillets are small (than 2 or 2.5 oz) cut them in half before frying. For 75 people with other food options 35-45 lbs will be more than enough.

This is correct... cooking for a plated meal and for a grazing social event are two completely different numbers.
Usually 6-8oz protein portions for a grazing social event and even less when adding other heavy options to pick on. Its a shower not Thanksgiving.
