Count on each person on average eating three (4 ounce) fillets. that equals 210 fillets plus a 10 % fudge factor to account for the pigs in the crowd. Then look at fillet size and do the math for 230 fillets. If 4 ounce fillets (What I would do), that would equal 57 pounds. If 6 ounce fillets and 3 per person, figure 86 pounds, which seems high. I don't think many would eat three 6 ounce fillets, so if they took only 2, you would need 52.5 pounds.
