It's not so much that.

It's that there's no real health benefit versus real meat. Just as much (if not more) fat in those fake ones because of all the stuff they add to make it taste and "feel" like meat.

Plus, they are more expensive than a beef burger and when money's tight, that's a problem.

Finally, it's a product aimed at a demo that is largely non-meat eaters anyway and they're not inclined to add to the bottom line of fast food burger joints.
