I do as well. The problem is cooking something like a chuck roast on a week day. I don't work from home and neither does my wife. If we want Pot Roast for dinner on a Tuesday then Instapot is a good way to make that happen. I can sear roast and sautee trinity before work then slow cook roast all day. If I come home and roast isn't as tender as I'd like then I can just convert to pressure cook for 20-30 min. and bam we have well cooked roast on a weekday night.
