my third down defense sucks at the moment. Also, for some reason everytime i get to fourth down they're in a position to go for it and they always do 
I figured for the most part it had to do with the talent...i'm playing with such inferior talent at the moment. I average an INT a game but drop many.
i'm not worried though user to user games fair much different then against the computer. I always thought the offensive/defensive settings were for simulations. So the computer knows how to play when you aren't playing.

Those are, but the sub in/out aren't.

One thing that helps me alot against the computer is putting alot of pressure while playing tight on the receivers. Even if you have less talent, the quarterback throws the ball quicker and your DBs stay with the receivers for about 8-10 yards. This leads to more turnovers and sacks. However, it also leads to a few big plays. I don't know if you do this, but it seems to work for me. I did this with Western Kentucky on Heisman and went 12-1. Like you said though, it all changes in a user vs. user game.
