It doesn't necessarily make them easy, but if you headshot them with an arrow it stuns them. Then run up to their sides and you can mount them like a horse. The Wii was essentially an upgraded GameCube and the Wii U is an upgraded Wii. They are all built on the same Power PC architecture. Wii U emulation is still a little early but it won't take long to get it to a playable state since much of the ground work has been done for GameCube and Wii emulation...
