Day trip to the Columbia River Gorge is a must do. Take the Mt. Hood Loop. You can stop and see waterfalls right off the road and go on short hikes. Full Sail Brewery is in Hood River and pretty solid for lunch and beer. It gets pretty crowded. Lots of Wind surfing at Hood River if you are into...

Bayou City Seafood & Pasta on Richmond is the closest thing to good Cajun food. Seafood Courtbouillon, fried catfish and red beans (lunch only I believe) are both really good. Duck Tour - I typically don't like real touristy things, but enjoyed this. Do it early in the trip. It gives you a good background and layout of the city.
