Hopefully you have better luck getting into the rogue. I was with 2 other guys, we're all three in our mid 20's and they denied all of us

Day Trips:
Hood River (Columbia River Gorge) - If you want to wind surf, this is the mecca. Otherwise, go to pFriem brewery and just watch.
Oneonta Gorge
Cannon Beach
Pacific City (with stop in Tillamook to see the cheese factory and get ice cream). Go to Pelican Brewpub - it's on the beach and has the best view of a haystack rock and the Kiwanda peninsula.
There are various wineries in the Willamette Valley
Silver Falls State Park
In Portland, don't bother with Rogue. There are 4 better breweries withing walking distance of there. 10 Barrel is right across the street from Rogue, and their roof bar is money. Fatheads, Breakside (new brewpub scheduled to open soon), and Deschutes are all great and within several blocks.
ETA: Breakside's new brewpub is probably a mile away from the other 3 breweries I mentioned. They are all in the Pearl District, and there are beaucoup shops, restaurants, and taprooms in the area. Fun area to hang out in.
There are many great taprooms and breweries all over the city. Go to Cascade for sours. Hair of the Dog if you like strong ales. The Commons or Upright if you like farmhouse ales.
Portland has great restaurants, as well.
Go to Washington Park - the Portland Zoo, Japanese Gardens, and the International Rose Garden are all there.
There are several eclectic neighborhoods where you can hang with hipsters and get great food and beer while you people watch.
There are also brewery tours. Brewcycle is pretty fun - they have 10 person bicycles that everyone pedals.

They claimed all three Missouri ID's were fake. It was bizarre, as none of us look younger than 25

McMenamins...many bars and resorts throughout the State...Portland they have an old elementary school (Kennedy School) turned into a big screen movie theater, great restaurant and different classrooms with different bars...martini bar, beer bar, cigar bar...1st grade is whiskey bar, I think.

Weird. I'm hoping to make a trip out to Portland with the SO someday in the near future. The beer scene there is one of the best in the country. Plus there are some beautiful places to see nearby there. Cannon Beach as well as Oneonta Gorge.

Might as well stop at Multnomah Falls (600 ft waterfall) if going to Oneonta Gorge.
If going to Cannon Beach, drive a little north to Astoria, at the mouth of the Columbia River. Go to Astoria Column for an incredible 360 degree view. Also, Fort George is one of the best brewery experiences you'll ever have. Go into their small taproom in their production facility. You can try their experimental beers. They also have two restaurants on site, as well.

Do exactly what JaxTiger said! We went for 5 nights over Memorial Day weekend and had a great time. Almost did all the day trip stuff he said. Since we only had 4 full days, we regretted doing the coast instead of going south to wineries. When we did Hood River we went to Marchesi winery - would highly recommend!

Day trip to the Columbia River Gorge is a must do. Take the Mt. Hood Loop. You can stop and see waterfalls right off the road and go on short hikes. Full Sail Brewery is in Hood River and pretty solid for lunch and beer. It gets pretty crowded. Lots of Wind surfing at Hood River if you are into that. After Hood River on the Loop, the terrain changes and there are lots of vineyards. The Timberline Lodge on Mt. Hood is a really cool old lodge.

Note that none of the things that I have mentioned are more than an hour and a half from Portland. If you want to go a little further, Bend, the Sea Lion Caves, Crater Lake, Painted Hills, and the Wallawa Mountains are all within 4-5 hour drive (as well as most of western WA).
