I always find the idea of atheist intriguing....

Where did we come from? Evolution for sure no doubt.

Where did the fish/monkeys come from? Cells, Protons, particles, etc....

Where did those come from? Big Bang Theory type of stuff ( probably true).

How did the Bg Bang actually happen though? If there was nothing, then how did that just 'happen'?

It's almost like the whole region was a lot more stable before we went in there like cowboys and destabilized it. Funny how things work.

First of all, there actually are theories regarding this. Books like "A universe from Nothing" lay out plausible scientific scenarios for an expansion out of essentially "nothing".

Second, if we say God did it then that begs the question of where God comes from? If we say he is eternal, why not simply skip a step and say the universe is eternal?

Basically, it involves the detectable ability of subatomic particles to spontaneously pop into and out of existence in a vacuum. The idea that matter cannot be created or destroyed is not technically true, though it is effectively true on the scales relevant to us. The (overly simplified) idea is that the creation of the universe was the sum of these quantum fluctuations. We can observe and measure spontaneous energy generation from spontaneous atomic generation in vacuums in laboratories. The energy emerges effectively from no prior starting point or precursor.

The proposed mechanisms are reproducible in experimental systems.

Sure the actual event is not provable, but the ability for it to happen is supported by evidence.
